Vegetable Fried Rice

Vegetable fried rice is one of those rare combinations of absolute deliciousness and cooking ease that should be a staple recipe in anybody’s Rolodex of tasty meals. Just as much as you can have it as a side with a hearty portion of meat or vegetables, vegetable fried rice also delicious as a standalone dish, or even a snack for when you are feeling lazy. This is exactly why we wanted to come to you with one of our favorite recipes for the dish, and as it would turn out, Seal the Seasons’ Oregon/Washington Vegetable Blend is perfect for making vegetable fried rice! You can spruce it up with additional veggies or add some protein to give it some heft.

Vegetable Fried Rice

1 Cup Seal the Seasons Vegetable Blend

3 Cups cooked rice (cold, leftover rice works best)

2 Tbs sesame oil (more or less to taste)

1 Small onion, chopped

23 Tablespoons soy sauce (more or less to taste)

2 eggs

Green onions (optional)

Other Vegetables (optional)


STEP 1: Thaw and drain Seal the Seasons Vegetable Blend.

STEP 2: Beat eggs and set aside.

STEP 3: Preheat large skillet over medium heat. Add sesame oil, onion and vegetable blend. Fry until vegetables are tender.

STEP 4: Push veggies to the side and add the beaten egg to the skillet. Scramble the egg and then mix with the vegetables as the egg starts to firm.

STEP 5: Add the rice, soy sauce, and more sesame oil (if needed). Continue stirring until heated through.
