Sure, bacon makes everything better. But brussels sprouts and bacon are a particularly great combination. The savory flavors and perfectly crispy texture make it a winning dish every time. It's simple enough for a weeknight dinner, but nice enough to serve at the holidays. And you can always swap the bacon for pancetta if you want to make it a little fancier.
Cook frozen brussels sprouts in microwave, according to package instructions. Let cool slightly and chop in half (if desired).
Cook bacon in a large skillet over medium high heat until slightly crispy. Remove from pan and roughly chop.
In the same pan with the bacon grease, melt butter over high heat. Add onions and brussels sprouts and sautee until onions are soft and brussels are starting to brown.
Return bacon to skillet and add salt and pepper to taste. Serve immediately.
