There are many reasons to love a galette -- it's easier than pie and it comes out looking gorgeous. You don't have to be a perfectionist with the dough - it's supposed to look rustic!
Between its visual appeal and the farm-fresh flavor of Seal the Seasons' Dark Sweet Cherries, this recipe is a treat for all of your senses.
4 Cups Seal the Seasons Dark Sweet Cherries (thawed and well-drained)
12-inch round chilled pie dough
1/3 cup Brown Sugar
2 Tbsp Cornstarch or Flour
1 Tbsp lemon juice
½ Tsp. Almond Extract
¼ Tsp. Salt
1 egg +1 tablespoon water
Directions
Thaw and drain the frozen cherries.
Heat oven to 375 degrees F. Line baking sheet with baking parchment.
In a bowl, thoroughly mix and mash cherries, brown sugar, cornstarch (or flour), lemon juice, almond extract and salt.
Lay out chilled dough on parchment lined baking sheet. Place cherry filling onto center of dough, leaving a 2-inch border around the edge. Fold the edges up and inward, pleating the dough as you go around.
Beat together the egg and water to create the egg wash. Lightly brush the dough with egg wash and sprinkle the top of the galette with some additional brown sugar.
Bake for about 40-50 minutes until crust is golden brown.
