We think this may be the best roasted broccoli recipe ever! This zesty side dish is perfect for any occasion and is sure to be a new family favorite. We’ve paired our locally grown broccoli florets and cauliflower with bright lemon, savory parmesan, and mouthwatering garlic for a healthy and delicious flavor explosion.
Lemon Garlic Roasted Broccoli and Cauliflower
4-5lbs of mixed Seal the Seasons Broccoli and Cauliflower
4 cloves of garlic (sliced or minced)
2 tsp kosher salt
1 tsp ground black pepper
3-4 Tbsp olive oil
2 Tbsp lemon juice
2 tsp lemon zest
⅓ cup grated parmesan cheese
First, preheat the oven to 425°F
Place about 4lbs of mixed Seal the Seasons Broccoli Florets and Cauliflower on a sheet pan. No need to thaw, but be sure that they are in a single layer in order to properly cook!
Top the broccoli and cauliflower with the garlic, then drizzle the olive oil on top.
Next, sprinkle the kosher salt and ground black pepper on top.
Roast veggies at 425°F for about 20-25 minutes. Remove when crisp-tender, but we love some extra charring!
Remove from oven and immediately add on the lemon juice with lemon zest and a bit more olive oil.
Top with the freshly grated parmesan.
Finally, serve and enjoy!
