This Maine Wild Blueberry Crisp recipe is full of juicy berries and the perfect melt-in-your-mouth, buttery crisp topping that is perfect for summertime!
Preheat oven to 375 degrees F (190 degrees C). Butter the bottom and halfway up the sides of an 8x8-inch glass baking pan.
Place wild blueberries in a large mixing bowl and sprinkle with 2 tablespoons of flour and sugar. Toss blueberries to coat with flour and sugar mixture. (When using frozen blueberries, be sure blueberry filling is boiling once you remove it from oven.)
Layer berries evenly in the prepared 8x8-inch baking pan.
To make the crisp topping, mix the flour, sugar, salt, and baking powder in a separate bowl. Then, stir the vanilla extract in the mixture. Cut in butter until mixture is crumbly.
Sprinkle the crumbled crisp topping over the blueberry mixture.
Place the baking dish in the preheated oven and bake for 45 to 55 minutes, or until topping is golden brown.
Transfer blueberry crisp to a wire rack to cool for about 30 minutes.
