Peach cobbler isn’t just a summer treat when you have Seal the Seasons on-hand. A bowl of warm cobbler with a scoop of vanilla ice cream is a crowd-pleaser at any time of year. Whether you’re whipping it up for a summer BBQ or a cold winter evening, this recipe is comfort food at its finest. Being a smaller batch (serves 4-6 people), it’s great for weeknight desserts and the recipe can easily be doubled when you have more mouths to feed. Either way, there probably won’t be leftovers!
2–3 Cups Seal the Seasons Peaches (thawed and drained)
1/4 Cup butter
1/2 Cup Flour
1 Cup Granulated Sugar (divided)
1/4 Cup Brown Sugar
1 Tsp Baking Powder
1/4 Tsp Salt
1/2 Tsp cinnamon
1/4 Tsp nutmeg
1/3 Cup Milk
1 Egg
1/4 Tsp vanilla
Directions
STEP 1: Preheat oven to 350°F.
STEP 2: While oven preheats, put the butter in a 9-inch glass dish and place in oven until melted.
STEP 3: Mix flour, 2/3 cup of sugar, baking powder and salt in large bowl. Add milk and egg to flour mixture and stir to combine.Pour batter over melted butter in glass dish. – DO NOT STIR
STEP 4: Put the peaches in a bowl, add 1/3 cup sugar along with vanilla, cinnamon and nutmeg. Stir to combine. Spoon peaches gently over batter. – DO NOT STIR. Sprinkle brown sugar over top of peaches and batter.
STEP 5: Bake cobbler for 40-45 mins or until batter is golden brown. Serve warm with vanilla ice cream.
