Need to incorporate some more green veggies into your life? Have a picky-eater kiddo, or even a veggie-hesitant adult at home? They will LOVE this creamy, satisfying Spinach Mac and Cheese recipe! Our locally-grown, flash-frozen cut spinach is so easy to add to this cheese sauce and really blends well into it! However, if your family is still a bit reluctant about eating green pasta try adding in less spinach at first - you can always add more!
Fill up a large pot 2/3 with water. Add a pinch of salt and bring water to a boil.
Add in the macaroni noodles and cook according to the pasta package instructions.
Once pasta is cooked al dente, drain and set aside.
Next, add frozen spinach and milk to a blender or food processor. Blend on high until combined.
Add the empty pasta pan back to the stovetop. Melt butter on medium-low heat making sure not to burn. Then add in the flour and stir for about 20 seconds.
Once combined, slowly add in the spinach/milk sauce. Be sure to stir in with a whisk constantly until combined.
Stir and let the sauce thicken up a bit on medium heat. Next, stir in the grated cheese, garlic powder, and sea salt.
Pour the cooked macaroni noodles back into the pot and stir until well-coated with the spinach cheese sauce.
Finally, serve and enjoy! We love adding a bit more grated white cheddar cheese on top for a garnish!
