Strawberry Caprese Salad
16oz Seal the Seasons frozen strawberries
1lb cherry tomatoes
8oz mini mozzarella balls
1 cup basil leaves
1/2 cup mint leaves
2 tbsps lemon juice
Salt & pepper
1/4 cup extra virgin olive oil
2 tbsps balsamic vinegar
1 1/2 tbsps brown sugar
For the dressing, combine the extra virgin olive oil, balsamic vinegar, and brown sugar in a small to medium mixing bowl. Whisk the mixture well until smooth.
Next, cut the cherry tomatoes into halves, quarter the strawberries, and shred the basil and mint leaves.
After, transfer cherry tomatoes to a large mixing bowl and add in salt and pepper to taste. Mix together until cherry tomatoes are coated with salt and pepper mixture.
Add all other ingredients to the mixing bowl, including the dressing, tossing until well-combined.
Finally, serve and enjoy! We love serving this salad with sliced bread, but it's perfect as is! Be sure to refrigerate if not served immediately.
